Pesto Hummus

Ingredients

  • 15 ozs  chickpeas (cooked)

  • 1/3 cup tahini

  • 1/4 cup pine nuts

  • 1 lemon

  • 10 basil leaves

  • 2 medium cloves of garlic

  • 2 tbsp extra virgin olive oil

  • 4 tbsp cold water

  • a pinch of sea salt

  • pepper to taste 

Instructions

  1. Combine the chick peas, basil, tahini, garlic and the rest of the ingredients in a food processor

  2. Process for 2 minutes, until mixture is smooth and creamy.

  3. Transfer to serving bowl and garnish with basil

  4. Serve with a variety of veggies (celery, carrot, cucumber, zucchini etc and pita for dipping.
